Kuku Sabzi, Delicious Iranian Vegetarian Dish

Iranian dishes excel at making people who have never tried them fall in love at the first bite. The unique combination of spices and flavorings with a wide range of vegetables, herbs, fruit, grains, nuts, meat and most importantly rice only needs the wand of Iranian cuisine to perform magic and leave an explosion of unforgettable tastes in the mouth- and such is Kuku Sabzi.

Its delectable smell, delicious look and perfectly pleasant taste make it almost impossible to resist this Iranian dish. To share the gastronomic delights of Iran, IFP has decided to file the recipe for Kuku Sabzi, which is also a common meal before the turn of Persian Year on the eve of Nowruz.

Serves 4

Ingredients:

1. 125 grams finely chopped parsley

2. 50 grams finely chopped scallions

3. 125 grams finely chopped wild leek

4. 125 grams finely chopped coriander

5. 125 grams finely chopped dill

6. 50 grams finely chopped fenugreek (optional) – The original recipe does not contain this herb. However, it can be included if you like the smell that it gives to the dish.

7. One-two garlic cloves, finely chopped (optional)

8. 5-7 eggs

9. Two tablespoons lightly broken walnuts – The pieces should not be too big nor should you grind walnuts into powder.

10. One heaped tablespoon barberries

11. Salt and pepper to taste

12. Cooking oil

In a large bowl, mix the finely chopped herbs and garlic with the eggs and whisk the mixture thoroughly. It is immensely important that they are well blended. Then add walnut pieces and barberries as well as salt and pepper.

Pour oil into a frying pan and let it get hot enough. Put the mixture in the pan and try to spread it evenly with the flat part of a spatula. Immediately after the mixture starts setting, turn down the heat and give it minutes to be fried. Afterward, cut it into eight wedges and flip the slices over and fry them on a low heat for about 10 minutes. The dish can be served both hot and cold. Although the dish can be baked in the oven, based on the original recipe, the mixture is usually fried in a pan.

High heat can cause the barberries and the food at large to burn and turn blackish green. On the other hand, if the oil is not hot enough before adding the batter to the pan, the mixture won’t set well.

If you have difficulty cutting and flipping over the slices, you can use a small frying pan to make omelet-like Kuku and turn it around without having to cut it into slices.

Esteghlal Khuzestan Wins Iran Professional League

The Ahvaz-based football team defeated Zobahan 2-0 at the Ghadir Stadium and won the title with the superior goal difference over Persepolis.

Mehdi Zohaivi scored twice for Esteghlal Khuzestan in the 56th and 59th minutes.

In Tehran, Persepolis defeated Rah Ahan 2-1 in front of more than 100,000 spectators but finished in second place because of an inferior goal difference to Esteghlal Khuzestan.

Ramin Rezaeian and Ahmad Nourollahi, who came off the bench, scored for Persepolis in the 82nd and 85th minute but Mehrdad Mohammadi reduced the deficit with one minute remaining.

 

 

Esteghlal came third after being held by Saba in Qom.

Mohammad Ghazi gave Saba the lead in the 28th minute but Omid Ebrahimi equalized the match from the penalty spot five minutes later.

Furthermore, Tractor Sazi humiliated Esteghlal Ahvaz 5-0, Foolad drew 1-1 with Gostarseh, Saipa was held to a goalless draw against Naft Tehran, Siah Jamegan defeated Malavan 2-0 and title-holder Sepahan lost to Padideh 2-0.

At the end of the competition, Esteghlal Ahvaz, Rah Ahan and Malavan were relegated from the IPL.

IEA says Iran’s Oil Output Rose Faster than Expected

Nevertheless, the agency emphasized that a global oversupply of crude is still shrinking in face of increasing production from Iran.

The IEA said in a report that its calculations showed that Iran ramped production up by 300,000 barrels a day month-on-month in April, hitting 3.56 million barrels a day.

The Paris-based agency further emphasized that Iran’s exports increased at greater rate, with preliminary data suggesting a month-on-month rise of 600,000 barrels a day to about 2 million barrels a day.

However, the dramatic increase from 1.4 million barrels a day seen the previous month, may have been helped by loadings that spilled over from March, it added.

China was Iran’s largest customer, importing 800,000 barrels a day of crude.

The IEA further emphasized that despite the strength of Iran’s rebound, global oil markets are moving closer to balance in the second half of the year as unplanned disruption to production in countries such as Canada and Nigeria are helping to run down a global overhang of crude inventories.

Global oil stocks will diminish to 200,000 barrels a day in the last six months of the year from 1.3 million in the first half, it said.

The IEA has previously projected supply will exceed demand by an average of 1.5 million barrels a day in the first six months of 2016.

Backing Terrorists in Region Serves Zionists: Iran’s Larijani

“Some purported Islamic governments are the enemies of God and have caused oppressed people to be killed in countries like Yemen and Syria,” Larijani said in an address to the opening ceremony of Iran’s 33rd international Quran competition, held in Tehran Wednesday.

“By helping terrorists, these governments have caused the shedding of Muslims’ blood and it is Zionists who benefit from this,” he added.

Larijani further said that rulers of certain Muslim countries publish the Quran and claim to be advocating the holy book but have actually abandoned the Quran.

He seemed to be hinting at Saudi Arabia and certain other regional countries whose backing for terrorist groups and interference in other countries’ affairs have led to crises in the region.

Riyadh has reportedly spent billions of dollars to nurture Wahhabism throughout the world, which is directly responsible for the rise of such terror networks as Al Qaeda and the Daesh (ISIL) Takfiri group, which has been wreaking havoc in several countries, mainly Iraq and Syria.

Saudi Arabia has also been under fire for violating international humanitarian law since the start of its deadly campaign in Yemen last March, which has so far claimed the lives of 9,400 Yemenis, including 4,000 women and children.

 

War Veteran Talks about Life after Being Wounded in Syria

According to official statistics, there are nearly 550,000 disabled veterans of the Iran-Iraq War living in Iran as of June 2014. Many have also been wounded during the advisory missions in Syria and Iraq in the ongoing campaign against terrorism.

Iran and China Discuss Cooperation on Fighting Corruption

Seraj is heading a high-ranking delegation to Beijing, attending the 9th Annual Conference and General Meeting of the International Association of the International Authorities (IAACA).

Cao, for his part, appreciated the mutual interactions in fostering cooperation in international arenas. He also praised Iran’s General Inspection Organization for its readiness to host the next annual meeting of the IAACA.

The Chinese minister, for his part, said that his country is ready to share its experience with Iran in the field of fighting financial corruption.

In late April, Iranian and Chinese officials in a meeting in Tehran underlined the necessity for serious action to fight against terrorism and dispatch more humanitarian aid to the Syrian people.

Leader Appoints New IRIB Chief

In the decree, Ayatollah Khamenei accepted the resignation of Mohammed Sarafraz, who has held the IRIB presidency since November 2014, and expressed gratitude to him for his “revolutionary efforts”.

The Leader further appointed Ali Asgari as the new IRIB head and urged him to pay attention in his term to planning, executing macropolicies, recruiting and training revolutionary and competent personnel and having an effective presence in cyberspace.

Ali Asgari had served as the IRIB’s technical deputy during the presidency of Ezzatollah Zarghami (2004-2014).

According to Iran’s Constitution, the IRIB chief is picked directly by the Leader for a five-year term.

 

IFP: This announcement puts an end to various speculations over who would replace Mohammed Sarafraz as head of the national broadcaster. For the first time since the Islamic Revolution, an IRIB chief has failed to complete their constitutionally mandated term, with Sarafraz’s resignation officially having been accepted on May 11.

UNIDO Ready to Promote Hamedan Leather Industry

He made the remarks in a speech to Hamedan Province Employment and Investment Working Group.
Babaei said that UNIDO had helped several industries in Iran receive educational support, including the leather industry.

The deadline for the implementation of the project is 3-5 years, and Hamedan is one of the seven provinces designated by UNIDO.

The people of Hamedan have a long history in the leather industry and 1,000 leather producers currently operate in the province, he said. At present, Hamedan is exporting leather to Turkey and Italy.

UNIDO mainly aims to help promote industrial development in developing countries, as well as those with transition economies.
