Dishes Served in Iran during Nowruz: Sabzi Polo Ba Mahi

Dishes Served in Iran during Nowruz: Sabzi Polo Ba Mahi (3)

Annually on March 20 or 21, Iranian people celebrate the beginning of the Persian New Year, known as Nowruz. Just like other people around the world, people in Iran cook their own traditional foods, such as Sabzi Polo, to mark the arrival of spring and the beginning of their new year.

According to a Farsi report by Sarzamin-e Man magazine, among the main traditional dishes prepared and served on the eve or first day of Nowruz are Samanu (an Iranian sweet paste made entirely from germinated wheat), Sabzi Polo Ba Mahi (a mixture of rice and chopped herbs with fried fish), Kaak (a pastry and souvenir of the western Iranian province of Kermanshah), and Reshteh Polo (thin noodles with rice).

What follows is a brief look at Sabzi Polo Ba Mahi and the recipe and instructions for cooking it:

Nowruz’s National Dish
Sabzi Polo (a mixture of rice and chopped herbs) Ba [with] Mahi (fried fish) is the most popular dish among Iranians served on the eve or first day of Nowruz.

Why is Sabzi Polo Ba Mahi the Iranians’ main dish on the initial days of the New Year? If you look the question up on the Internet, you will be presented with a host of fascinating answers. Some believe that eating the food on the eve or first day of Nowruz is a tradition handed down from the time of King Jamshid – a mythological king of ancient Persian culture and tradition who saved mankind from a killing winter that was destined to kill every living creature, and some relate it to the story of prophet Solomon (PBUH), and the fish and discovering the truth.

A number of other people hold that eating rice and fish symbolizes prosperity and abundance in Iranians’ life and spread, respectively, and that Sabzi Polo is a symbol of the nature’s regeneration and renovation.

The truth is that these conjectures are not supported by strong evidence. Eating Sabzi Polo Ba Mahi on the eve or first day of the New Year is neither related to discovering the truth nor a tradition to be traced back this way in the nooks and crannies of the history. Today, like many other traditions and rites, no one can identify the beginning and source of this custom. It owes its survival, popularity and prevalence to media efforts and public education. Thus, it is plausible to, at least as far as the foods eaten on the occasion of or during Nowruz are concerned, forget about formulating any philosophies and enjoy its flavour.

The symbol of Esfand, the last month of the Iranian year – which ended on March 20 this year, is two fishes that are said to be responsible for bringing Mithra [in Zoroastrianism, the protector and keeper of all aspects of interpersonal relationships, such as friendship and love) to the earth after being born.

Dishes Served in Iran during Nowruz: Sabzi Polo Ba Mahi -1

As you are enjoying the beauty and symbols [fishes] of the Iranian culture and arts, you would better uphold the modern tradition by cooking fish on the eve or first day of Nowruz and enjoy its flavour. There is no single method for cooking fish on the eve of Nowruz. Some eat it on the eve of the first day of the New Year, whereas, some would like to have it as their first meal after the transition to the New Year.

Even, in some parts of Iran, such as coastal regions, the dish is served with simple – without chopped herbs – rice. Nevertheless, the dish we suggest is a mixture of rice and chopped herbs with fried fish.

Recipe

Ingredients needed for preparing a dish adequate for up to six people:

  1. Five cups of rice
  2. 2,750 grams of herbs including chives, parsley, coriander, dill and garlic
  3. Two big fish
  4. One cup of flour or bread crumbs
  5. One big onion
  6. Half a cup of lemon juice
  7. Turmeric, salt and pepper
  8. Oil as much as needed
  9. A spoonful of tamarind (optional)

Instructions

Pour some oil into a stock pot and cover it with a sheet of Lavash bread – a soft, thin unleavened flatbread made in a tandoor – or slices of potato. Then, pour the drained rice into the stock pot, on the bread or potato slices. Mix the herbs you have earlier chopped with the rice and add the garlic cloves to the mixture.

Pour a little bit more oil in the stock pot and let the ingredients be heated together for a while until they are all cooked completely. Of course, you are required to save some of the chopped parsley and coriander for frying the fish.

After cleaning the fish, mince them into equal slices and marinate them for about half an hour in a mixture of lemon juice, onion slices, salt and pepper. Prior to frying the fish slices, cover them with a mixture of flour, turmeric, salt and pepper and then put them in a frying pan containing hot oil. After frying the fishes, they can be served in any desired dish along with the cooked rice and chopped herbs.

If you want our advice, we recommend that you can improve the flavour of the fish by pouring some sour sauce on it.
Instructions for preparing the sauce:

Solve the tamarind in a glass of water and then sift the solution.

Chop the onion finely in a separate dish. You can use a grater for this purpose. Fry the finely chopped onion along with garlic cloves, a little bit of turmeric and pepper. Then, add the parsley and coriander, you had earlier saved for the sauce, to the mixture and let it be heated for a while. Now, it is time to add the tamarind solution to the mixture.

Let the sauce be heated until it starts boiling and to gradually become thicker. Put the fried fish slices in a frying pan and place the pan on the gas stove. Now, you can put the sauce on the fish slices. Raise the lid of the pan and let the fish slices and sauce boil together for a few minutes or less, until the sauce’s water is evaporated and its flavour is imparted to the fish slices. After about 10 minutes, your fish is ready to be served.

“The government’s planning and forecasts for the supply of essential commodities and the stockpiling of people’s needs made today’s multiplied purchases easy. Although chain stores sold in a single day several times more than normal, the store shelves are not empty and there is no shortage of essentials.”

Jahangiri also emphasised the need for equipping and preparing better rest centres in Tehran province saying necessary measure must be considered the worst case scenario so that there shouldn’t be any concern about lack of hospital beds.

China Reports Zero Local COVID-19 Transmission for 1st Time

China’s National Health Commission announced on Thursday that there had been no new infections in the country’s central city of Wuhan, in Hubei Province, which is the epicenter of the coronavirus outbreak in China.

The commission, however, said the number of cases imported from abroad had surged by a record 34, mainly from Spain and Britain.

The number of new deaths from the pathogen across the vast Asian country was down to single digits, with just eight reported, bringing the total death toll to 3,245.

Data released by the commission also showed that 23 new suspected cases had been reported, with the total number of infections standing at 80,928. A total of 70,420 patients have recovered.

The coronavirus, which causes a respiratory disease called COVID-19, first emerged in Wuhan late last year. It has been practically contained in China but is spreading rapidly around the globe.

South Korea reports rebound in new cases

South Korea on Thursday reported a jump in new coronavirus cases, reversing days of a lowering pace in new infections, after a new outbreak emerged in a nursing home in the hardest-hit city of Daegu, southeast of Seoul.

The Korea Centers for Disease Control and Prevention (KCDC) said there had been a total 152 new confirmed cases, taking the national tally to 8,565. Ninety seven of the new cases were from Daegu, including 74 patients at a nursing home.

South Korea had recorded fewer than 100 new infections for four consecutive days until Wednesday.

As part of measures to stem the pandemic, South Korean authorities have begun to tighten border controls for all arrivals from overseas, with incoming passengers undergoing body temperature checks and completing health surveys on arrival at the Incheon International Airport.

Italy records biggest single-day jump in deaths

Italy, the worst-hit by the coronavirus in Europe, on Wednesday reported nearly 500 new deaths from the contagion, the highest one-day official toll of any country throughout the world since the first case was detected in China.

Head of the Italian Civil Protection Service Angelo Borrelli announced 475 new deaths from the new coronavirus, bringing the total number of fatalities in the country to 2,978, more than half of all the cases recorded outside China.

The country of 60 million has so far recorded 34.2 percent of all the deaths officially attributed to the coronavirus across the globe.

The European Union has been ramping up its efforts to coordinate the fight against the virus across all its 27 member states as the World Health Organization (WHO) warned on Friday that Europe was now the “epicenter” of the global coronavirus pandemic and was reporting more daily cases than China did at the height of its outbreak.

Australia closes borders, calls on people to stop hoarding

Meanwhile, Australian Prime Minister Scott Morrison announced on Thursday that his country was closing its borders to foreigners as part of efforts to contain the coronavirus pandemic.

With the majority of the cases coming from overseas, Morrison said all non-residents would be barred from entering the country from 9 p.m. local time (1000 GMT) on Friday.

Australia has recorded around 600 coronavirus infections and six deaths.

The Australian premier also warned people to “stop hoarding,” as shoppers across the country emptied supermarket shelves amid rising panic over the rapid spread of the pathogen.

Videos showed people storming grocery stores and fighting over foodstuffs and other essentials such as toilet paper.

“Stop it. It’s not sensible, it’s not helpful and I’ve got to say, it’s been one of the most disappointing things I’ve seen in Australian behavior in response to this crisis. That is not who we are as a people,” Morrison said.

Some large supermarkets in the major Australian cities of Melbourne, Brisbane, Perth, and Sydney have sold out fruits, vegetables, meat, and rice as fears of a lengthy epidemic rise in the country.

WHO calls coronavirus ‘enemy against humanity’

In a related development on Wednesday, the head of the World Health Organization (WHO) called the deadly virus an “enemy against humanity” as the number of infections from the pandemic soared past 200,000 across the world.

The COVID-19 has claimed more than 8,000 lives globally since the virus first emerged in China in December last year.

“This coronavirus is presenting us with an unprecedented threat,” Tedros Adhanom Ghebreyesus told journalists in a virtual news conference, stressing the need for world countries to “come together as one against a common enemy: an enemy against humanity.”

Tedros called on the international community to adopt physical distancing measures, including canceling sporting events, concerts and other large gatherings, to slow down transmissions.

The WHO chief underlined that the only way for countries to suppress and control the coronavirus pandemic was to “isolate, test, treat, and trace.”

Tedros also called on all countries to implement “comprehensive strategies” to slow down the virus transmission and flattening the pandemic’s curve.

Russia reports first death

Moreover, Russian health officials announced on Thursday the first fatality in the country as a result of infection from the now-global pandemic.

The patient — an elderly woman hospitalized in Moscow — had been diagnosed with several other conditions, including diabetes and heart problems.

The health department said in a statement that the 79-year-old died of pneumonia while being treated in an intensive care unit.

Russia has reported 147 cases of the novel coronavirus, according to official figures.
