Tas Kebab of Ardabil; A Tasty Iranian Dish

Tas kebab, an old-fashioned Iranian stew with chicken or beef, is a colourful dish that has its own fans throughout the country.

The meal is prepared in two different ways using chicken and beef. In the Iranian northwestern city of Ardabil, chicken Tas kebab is more famous for its special flavour and aroma.

Its ingredients include chicken breast and chicken thighs, fresh ginger, garlic, Persian shallot, cumin, cinnamon, walnuts, coriander seeds, olive oil, honey, coriander, saffron and chili peppers.

When Tas Kebab is placed on the table, bread and yogurt are served next to it to make the table more colourful.

 

Ingredients that serve six:

2 large pieces of skinned chicken breast

4 skinned chicken thighs

2 tablespoons of olive oil

2 crushed garlics heads

200 gr of peeled Persian shallot

1 piece of grated fresh ginger

1 TBSP of cumin powder

1 TBSP of slightly milled coriander seeds

2 small pieces of cinnamon bark

375 gr of ground walnuts

500 ml of chicken extract

1 TBSP of honey

2 TBSP of fresh chopped coriander

Ground saffron and chili: as much as needed

 

Instructions:

Heat the oil in a medium-sized pan and add the spicy chicken pieces. Fry the chickens until they are completely crispy and then remove them from the pan. Sauté the Persian shallot on a low heat, so much so that they get golden; then add the grated garlic and ginger and cook for 30 seconds.

Now pour all the spices into the pan and let them sauté for one minute. Mix the ground walnuts with the spices so the walnuts become spicy. Now put the chickens in the pan and pour the chicken and honey extract on it. When the food is boiled, put the pan into the oven so that it is cooked for 40 minutes to 1 hour. At the end, sprinkle the coriander on it and serve.
